FLOUR BAKERY Boston, MA
Head Baker July 2016 to June 2019
– Assisted the Pastry Chef in running, managing, and maintaining a bakery with daily sales averaging
$14,000 by ordering raw ingredients from various vendors, producing pastries to keep our counter and
refrigerated case full, and problem solving issues stemming from both bakers and counter staff
– Trained six staffers across two locations for four different roles: case station, cookie station, opener
station, and production
– Attended monthly leadership meetings facilitated by the owner over the course of a year to gain
knowledge in moving to the next level of management including topics such as “Ownership of the
Bakery”, “Problem Solving with Staff/Guests”, and “Self-Awareness”
– Invented a more efficient system to rotate stock of bread pudding kits from each bakery to the production
kitchen cutting down on food waste at my location by 10%

– Oversaw one person by creating daily production lists, training on new menu items, and giving correction
when necessary to maintain the product quality
– Assisted the Pastry Sous Chef with ordering product and adjusting the amount of product baked based on
sales flow
– Created new menu items made from local ingredients, including a pastry that eliminated food waste, to
sell at a local farmer’s market
AM Pastry Cook March 2015- November 2015
– Redesigned and improved the kouign amann, a croissant-like pastry, increasing production from 80 to
over 180 pieces per week
– Produced over ten varieties of pastries for in-house bakery sales as well as for two partnering restaurants
